happy monday beauties!
I hope you had a seriously fabulous weekend. the hubs is currently injured {thankfully not too seriously, and should be back in action soon} so we got a bit more family time since his team was on the road. yesterday we ventured to nearby Dortmund for a little stroll and indulged in a little taste of home – starbucks. for whatever reason it doesn’t matter what country I am in starbucks always provides a wonderful sense of familiarity. I was actually really {really} excited to taste fall re: pumpkin spice latte but apparently they don’t have them here in germany. {insert gasp}. I would be lying if I said I wasn’t rediculously disappointed so instead opted for their fall special an apple-crumble latte. yes, for real. apple-crumble and it was ahhhhh-mazing. in my opinion it gives the pumpkin {aka kurbis in german – see I’m learning…} spice latte a run for it’s money!
I always encourage my clients to make very wise and mindful food + drink choices most of the time but you have to live a little too, so this was my indulgence and it was heavenly! balance + moderation reign king in my world.
as we were strolling into buckers, we couldn’t help but laugh at this front row parking.
four-wheelers are everywhere around here and are perfectly legal to drive on all roads although I have yet to see one on the autobahn. probably a good idea.
if you are looking for a new recipe to try this week I thought I would share this tasty green pizza with you. I can’t take any creative credit for this one. my mother-in-law served this up over the summer and we fell in love with it. it’s unreal! I made a variation of her recipe based on what was in my kitchen and it was still delish.
Ingredients:
- crust of your choice
- brussel sprouts {approx. 1-1.5 cups}
- red onion
- 3-4 cloves of garlic
- option: 3 or 4 slices of bacon (preferably nitrate free)
- 1/4 cup pesto (or enough to cover the base of your crust)
- option: cheese of your choice {I didn’t use any but I might try some goat cheese or even a bit of feta next time}
Method:
- preheat oven to about 425 degrees {this will ultimately depend on the type of crust you are using}.
- wash and chop your brussel sprouts. depending on what kitchen gadgets you have you could also shred them.
- in a pan cook your bacon if you are choosing to include this ingredient. once cooked, set aside to cool down. crumble into smaller pieces later OR cut it before placing in the pan to cook.
- in your pan add the brussel sprouts and cook until lightly browned with a bit of extra virgin olive oil, sea salt + black pepper.
- spread the pesto on the base of your pizza crust.
- chop your red onion + garlic.
- layer the brussel sprouts, red onion, garlic + bacon on top and place in the oven to cook for approx 15-20 minutes {again this will depend on your crust}. if you are adding cheese feel free to do this just before you place in the oven.
- once cooked, slice + serve.
it’s no secret that I love pizza. but my favourite pizza’s are those that I make at home with lots of healthy ingredients {and vitamin L}. the best part is that your options are endless for the tasty combinations you can come up with.

That pizza looks fantastic – I love brussel sprouts! A great pizza trust to try is the one in Quinoa 365…a little extra nutrition in the crust from the quinoa is a nice bonus and it’s just a nice, easy, tasty crust. If you don’t have the book, you can probably find the recipe online.

Yes, Karstadt does have lots of great items. I really really love Dortmund and can hardly wait for the Christmas markets to open!!!!
My husband and I created a delicious pizza using hummus, caramelized onions, Kalamata olives, goat cheese, and a dash of chili flakes. Yummy!
