a week in review + what's on my plate

Much of my last week has been spent "unplugged" as my little family headed to Chicago to catch up with some amazing friends. If you need a little motivation to unplug more regularly, read THIS.

Here is sweet Sloane at 9.5 months en route.

She was a champ on the 7 hour car ride. 

Vacations are always a nice break for anyone who spends a lot of time in their kitchen. However, by the time I get home I always feel inspired and ready to get back to creating healthy eats.

Here are some delicious whole foods that have made it onto my plate the last couple of days...

This Open Faced Hummus Sandwich hit the spot as a light lunch. I used 2 pieces of sprouted grain bread {toasted} + hummus + cucumber + yellow bell pepper + radish + parsley + black pepper.

Here is what our hearty Butternut Squash Bowl looked like for lunch.

My husband's comment was,  "I could eat this every day".

I could not agree more.

I loaded this bowl full of quinoa + butternut squash + kale + {shredded} zucchini + {fresh grated} ginger + garlic + EVOO + dulse + curry powder + turmeric + black pepper + fresh parsley + pumpkin seeds.

And in case you are looking for a sweet treat to indulge in, I know you will loooove this Medjool date and almond butter combo.

To make this delicious Sweet and Salty Date treat take a date, remove the seed then stuff it with almond butter, {raw} macadamian nuts and a little dash of sea salt.
