End Of Summer Recipe Inspiration

Well hello gorgeous! Today I wanted to share what has been on the menu in my world with the hopes of providing you with a bit more recipe inspiration in your kitchen this week.

Thanks to my weekly CSA delivery from Lynn River Farm I still have amazing plant based building blocks to construct delicious and nutrient dense salads, smoothies and other summer meals.

This detox friendly salad is loaded with kale, romaine, red cabbage, hemp hearts and parsley.

In my opinion, this toasted hummus sandwich is fast food at it's finest made up of sprouted grain bread {toasted}, hummus, romaine and zucchini slices.

This salad of heaping greens and a homemade "peanut sauce is made up of arugula, ribbons of yellow zucchini and carrot, red cabbage, parsley and topped with raw Brazil nuts.

You can make your own "peanut" sauce by combining the following ingredients in a blender or food processor. I stored what wasn't used in a mason jar for other meals and snacks.

  • 1/2 cup almond butter
  • 1/4 cup EVOO
  • little splash of sesame oil
  • clove of garlic
  • Bragg Amino Liquids or Tamari
  • sea salt and pepper to taste

Here is a delicious cup of blended goodness using almond milk, romaine, frozen banana, frozen raspberries, hemp hearts, chia seeds, almond butter, bees pollen, black strap molasses and maca root powder.

This morning I enjoyed this perfect summer bowl that includes quinoa flakes, almond milk, hemp hearts, cinnamon,  peach, blueberries, pumpkin seeds and black strap molasses. It was super fresh and light tasting while still being satisfying.

Coming up next in my kitchen are fun ways to use a patty pan squash and I also have several jalapeno's from the last couple deliveries so I hope to make some healthy jalepeno poppers - YUM!
