If I had to choose a "cheat" snack food, mine for as long as I can remember would be chips, specifically salt and vinegar.
While those may pass my lips a couple times a year (mostly at summer BBQ's it seems), kale chips have filled that void in my life.
Kale itself is an amazing superfood that is loaded with vitamin C, vitamin K, vitamin A, manganese, and is cholesterol lowering. You will notice I try to include kale in almost all of my green juices and smoothies as often as I can. I consider this to be a true beauty food in addition to all the other health benefits for our bodies. So please, try to include more of this into your whole foods diet!

But back to kale chips. this is just one way I choose to enjoy kale. You will be able to find packaged kale chips at most health food stores and some grocery stores, but to be honest, who wants to pay $6 or $7 a bag?!? Not me!
So here is an easy-peasy/affordable way to make your own.
- Bunch of kale
- 1 Tbsp EVOO
- Sesame seeds
- Sea salt
- Preheat oven to 250 degrees
- This time I happened to buy some pre-washed kale but I usually buy a bunch of kale from the farmer's market. In this case you would wash the leaves and spin dry. It is important to get the leaves dry so that they don't cause your chips to be soggy.
- Remove the stem from each leave, and tear bite size pieces into a medium sized bowl.
- Add your EVOO and a few sprinkles of your sea salt, cayenne pepper, and sesame seeds.
- Using your hands, massage the EVOO and spices into the leaves.
- Place the leaves onto one or two baking sheets. I like to sprinkle a bit more sea salt, cayenne, and sesame seeds onto them at this point.
- Place them in the oven and bake for approximately 45 minutes. The goal is to dehydrate the kale leaves so they crisp up. It is also important to bake them at a low temperature, not to only avoid blackened kale chips, but EVOO should not be headed over medium heat or the oil turns rancid....so be patient...it is worth the wait!
- Once they begin to brown and crisp up, remove them from the oven. they can be enjoyed immediately or set aside for later.
Here are ingredients as well as the kale already massaged with EVOO and ready to go into the oven that is preheated to 250 degrees.

It's a little ridiculous how itsy-bitsy they become!
Note: I did not eat the stems, must have missed those couple of pieces!
