chickpea salad

Good afternoon friends! I hope your day is going well.

I squeezed in a much needed workout and zumba class this morning. Have you done zumba before? If your gym offers the class I would highly suggest you try it out. And men, that means you too!

My first zumba experience was last year in Switzerland. Trying to learn anything in swiss-german is interesting to say the least. However, I was pleasantly surprised to figure out that regardless of the language, all you have to do is follow the moves of the instructor. I must note, I am not a graceful dancer by any stretch of the imagination. The good news, you don't have to be "good", all you have to do is shake what-chya-mamma-gave-ya.... and be prepared to laugh.

Any class I have ever been in ranges in all ages + sizes. from 20 year olds to 70 year olds. So don't feel intimidated. I will never forget this 70-something year old man at my first class in Switzerland, he had limited mobility, but gosh darnit did he love Zumba! Half the time he wasn't doing even close to what the rest of the class was, but he was loving it. Such an inspiration!

I was so happy to discover that the gym I am a member at in Syracuse, offers the classes. It really is a fun medium to high intensity, one hour cardio workout. We always joke that it's much wiser to watch the instructor and pretend we are little latin vixen's rather than become distracted by our own gangly reflection. Needless to say, todays class was a great workout, and I was hungry when I got home.

Yesterday I cooked up a bag of chickpeas so that was the base for this salad. It took me about 5 minutes to make this and there is enough leftover for another meal, which is always a bonus!

Ingredients:

  • Chickpeas (I cooked up a bag of dried chickpeas and used about 4 cups for this salad - but use whatever amount you would like. Dried or canned (well rinsed) are fine to use)
  • Yellow bell pepper
  • Cucumber (about 1 cup)
  • 3 stalks of celery
  • 3 green onions
  • 1 clove of garlic
  • 1/2 cup feta cheese (I prefer goats feta if possible)
  • 3 Tbsp extra virgin olive oil
  • 2 Tbsp apple cider vinegar
  • Juice of 2 lemons
  • S.S + P to taste
  • Handful of parsley

Method:

  1. Wash and chop your yellow bell pepper, cucumber, celery and green onions.
  2. In a large bowl add your chickpeas and chopped veggies. stir to combine the mixture.
  3. Mince garlic and add to the salad. 
  4. Add feta cheese, olive oil, apple cider vinegar, juice of lemons, sea salt, pepper, and some of the rough chopped parsley.
  5. Serve and top with some more parsley.
  6. Option: serve as a side OR add on top of a bed of greens.

Salads like this are so easy to make in advance, and use throughout your busy week as a healthy addition to any meal.
