This was a sunday morning starter for the husband and I over the weekend. The temperature has cooled down and we sipped on this comforting goodness.
In addition to the yumminess of this smoothie, I was so excited to use my brand spankin' new VITAMIX blender! This purchase has been a work in progress after much deliberation and research for TWO years ....
There were a couple reasons it took me so long to make the investment. The first being that I already had two working blenders. One that stays at home for use in the summer time, and the other that comes on the road with us during the season. Ot feels wasteful to replace something that is still working so I kept waiting....and waiting....but my darn blender just wouldn't die! The poor little thing has logged a couple kms over the years but it is small and easy to travel with when we are away from home. The problem is that the power is well .... not powerful anymore so I finally made the leap (RIP little blender) and made the purchase.
There were a couple other brands I was looking at but after surveying friends, fellow foodies and reading as many reviews as I could find online I knew the Vitamix was the real deal. So far (yes, I've only used it 4 times...) it really lives upto the hype. I have plenty more experimenting ahead of me but I can't believe the power this baby has! It's amazing really and makes me wonder why I waited so long.
Here is the how-to on this cup-o-comfort.
- 1.5 cups coconut milk (OR another option like almond, hemp, rice or oat)
- 1 frozen banana
- 1 Tbsp chia seeds
- 1 Tbsp almond butter
- 1 Tbsp raw cacao nibs
- 1 scoop Vega Whole Foods Smoothie Infusion
- 3 medjool dates (pitted)
- Dash of vanilla extract (alcohol free)
- Add all ingredients to the blender.
- Blend for 1-2 minutes.
- Top with a bit more cinnamon (optional) and serve.
