Today kicks off our Canada Day long weekend here in Canada and I am so excited to spend lots of time with family and friends doing some celebrating! I am also still hoping that our sweet baby will choose to make his/her arrival this weekend!
I am now 40 weeks + 2 days ... but who's counting ;)
We had a midwife appointment yesterday and it looks like things are progressing or at least starting too which is great news.
I think my husband is beginning to think I'm going a little crazy with this "nesting" stuff but I can't seem to stop. Between more cleaning and organizing yesterday I made the most delicious gluten free muffins!
I know you may not feel like turning your oven on in the heat of summer but I promise these are certainly worth it. The inspiration for these almond flour banana blueberry muffins came via twitter the other day courtesy of a great website called "clean eating chelsey". This is the first time I have ever baked with almond flour and it turned out fantastic!
Here they are heading into the oven ...
The finished product topped with a bit more cinnamon.
I'm not much of a baker but I am happy to report that these were easy to make and seriously tasted fabulous.
I enjoyed one right out of the oven with a bit of butter and it was ahhhh-mazing!
Wishing you a fabulous weekend friends and HAPPY CANADA day long weekend to my fellow Canucks!
