Melon Madness

Happy Friday friends, we made it! Here are THREE fabulous ways to consume this suculant melon that is perfectly in season right now.

I received the most magically ripe melon in a recent CSA delivery from Lynn River Farm and here is how this melon madness all went down.

Proscuitto wrapped melon with a drizzle of EVOO, chopped parsley and fresh cracked black pepper. This made a perfect little snack for the husband and I, but I'm sure you could really knock the socks off your friends if you serve this up at your next BBQ.

Melon kabobs with a lemon + cinnamon dip

Dip Ingredients:

  • 1/2 cup sheeps yogurt {or another yogurt of your choice}
  • zest of a lemon
  • juice of 1/2 lemon
  • cinnamon
  • 1 tsp raw honey

Method:

  • Cut your melon into small, bite sized pieces.
  • Assemble on skewers. Feel free to add other pieces of your favourite fresh fruit!
  • Place in the freezer for about 1/2 an hour.
  • Serve with your fresh lemon and cinnamon dip.

In addition to tasting perfectly sweet when in season, cantaloupe is an excellent source of Vitamin A {great for your beautiful peepers}, Vitamin C {immune boosting, gorgeous and healthy looking skin}, and potassium {that helps to control blood pressure}.

You should be able to find plenty of melons at this time of year at your local Farmer's Markets, health food and grocery stores.

What is your favourite summer melon recipe?

I am soooo looking forward to celebrating my little brother and his soon-to-be wife at their wedding this weekend.

Wishing you a wonderful day and a weekend full of bliss!
