RAW Brownie Delight

Ohhhhhh sweet sweet fall. Okay, I know it's not officially fall yet, but I can feel the change of seasons in the air and my taste buds are starting to crave more savoury and hearty fall offerings.

Unrelated to food and health, I am also dreaming of changing up my hair a bit by cutting some bangs. As a natural gingy, I don't do anything to play around with colour {well - quick flash back to college where it didn't turn out so well...never again!} so cuts are the only way I can get some serious change. To cut bangs or not to cut bangs... I am lusting on all sorts of styles over on Pinterest. My husband keeps reminding me of the last time I cut bangs and came home sobbing, telling him to NEVER let me cut them again...... thoughts?!? Ha!

I hope you had a fabulous weekend. Sloane and I spent a lot of our time with family, outside when it wasn't raining and we also celebrated the 85th birthday of a very special grandpa. 85 years is quite an amazing milestone!

I was happy to offer up some healthy raw brownies at the birthday festivities. I have made a variety of raw desserts and this is definitely one of my favourites. It's easy, packed with nutrition and still tastes like a decedant brownie. A win-win if you ask me.

Ingredients: 

  • 1.5 cups walnuts
  • 1/2 cup raw cacao powder
  • 1 cups medjool dates {remove the pits}
  • 1/2 tsp himalayan sea salt
  • approx 2 tbsp raw cacao nibs
  • cinnamon to taste

Method: 

  1. Add walnuts to your food processor and pulse on low until they are in small pieces. 
  2. Add cacao powder, sea salt and a bit of cinnamon. Pulse until well combined.
  3. Next add the dates. I added 1 or 2 at a time until they were all in the mixture and well combined.
  4. Add your mixture to a parchment lined pan or I added mine to some a muffin tin with some cupcake liners - how you are going to shape these decadant beauties is up to you. Scoop in the mixture and press using your hands to make them firm.
  5. Sprinkle a bit of cacao, cinnamon and cacao nibs on top of your brownies.
  6. Place in the fridge for about 15-30 minutes until firm then enjoy! I prefer them fresh out of the fridge and if you have extras it's great to freeze them in individual baggies for a quick and healthy sweet treat on a rainy day.

Other optional ingredients to change up the recipe would be:

  • Alcohol free vanilla extract or any other fav flavour from an extract or therapeutic/food grade essential oil {orange and peppermint would both be fab}
  • Chia seeds and/or hemp seeds
  • Cayenne - this would up the anty on the spice and anti-inflammatory benefits

The best part is that this my friends, is a healthy and nutritious dessert or snack!

Raw cacao is considered by many such as David Wolfe, as "THE" superfood because of it's high levels of vitamins, minerals {like iron and magnesium} and amazingly high source of antioxidants, including beautifying zinc. A healthy dose of raw cacao nibs or cacao powder is easy to add to raw desserts, amazeballs, chocolate pudding, or your smoothies.

The old adage that chocolate makes you feel better has some truth when you are choosing a high quality form of cacao {skip the crap chocolate bars friends} because it helps induce our feel good hormones and really does improve our mood and energy levels. Hence, why I thought this was the perfect start to my day this morning as part of my breakfast ;)

I hope that you will make this week extra special by taking some time for YOU. My favourite soul practice lately has been 10 minutes of ME time where I sit in silence, focus on deep breathing and really trying to tune into my heart while tuning out my head. Challenging at times, but it has been super rewarding.
