Greens For Breakfast

Hello and welcome to a spoonful of mid-week motivation. First up, how to eat more greens for breaky.

These Poached Eggs + Spinach bites were a hit!  

As pretty as it is, the good news is that it will only take you an extra couple minutes to opt for some greens to add to your dish instead of pouring yourself a bowl of {sugary} cereal.

I used some Finish Bread {toasted} topped with sautéed spinach {that I sautéed on very low heat with some EVOO,  lemon juice, sea salt and pepper}. Then on top of that is the poached egg with a bit of cayenne, sesame seeds and black pepper.

Hearty and healthy.

I want you to be mindful of choosing a great breakfast every day to nourish your {hot} bod and brain so that you are ready to take on the world.

Need another quick breakfast idea? As always, variations of OVERNIGHT OATS need to become a staple in your home too. It is so easy to prepare the night before and have on the table in 5 minutes flat in the morning.

A few times I have even set it in the oven for 15-20 minutes at about 350 degrees to warm up while I putter around the house getting ready for the day.
