Pineapple Banana Coco Chia Pudding

Looking for something that will tantalize the taste buds with some tropical flavours AND keep chia seeds fun and interesting? I've got ya covered my friend with this PINEAPPLE BANANA COCONUT CHIA PUDDING recipe. 

Mother Nature is making us wait for warm weather here in Southwestern Ontario {boo} but until then, I will continue to have a party in my kitchen pretending it's warm out.

This dessert recipe was born out of invention as I hosted my in-laws the other evening. I am always thrilled when it's a success for the wee one and our guests.

Ingredients:

  • 1/2 can coconut milk
  • 1/2 cup dairy or dairy alternative {I used hemp milk that I had on hand}
  • 3 Tbsp chia seeds
  • 2 banana's {fresh or frozen}
  • 1/2 cup pineapple {fresh or frozen}
  • 2 Tbsp shredded coconut {and a bit extra to garnish with}
  • 1 Tbsp alcohol free vanilla extract
  • Juice of a lime {feel free to add some zest to garnish too}
  • Cinnamon to taste
  • Optional: 1 Tbsp honey or maple syrup to sweeten

Method: 

  1. Add all of the ingredients except the chia seeds to a blender and blend on med/high for a couple minutes.
  2. Add the chia seeds and blended for another 30 seconds or so.
  3. Let stand in the fridge for at least an 1/2 an hour to an hour {or longer is great} in portioned out cups OR serving bowls OR in your blender. This allows it to become a bit more firm like pudding.

This is such an easy and quick {not to mention healthy} dessert to serve up for your next dinner guests orrrrrr just have for breakfast!

In other news - I'm still pregnant. 38 weeks and 1 day to be exact.

Not that I'm counting…

I'm having lots of Braxton Hick's contractions, and can feel my ligaments starting to loosen. I am ridiculously amazed at how incredible the human body is.

I am super grateful for regular chiropractic adjustments, Dancing For Birth , yoga, afternoon naps when needed and warm baths with essential oils and epsom salts at night.

Overall, I am still feeling really good and I think it's safe to say that I am in full nesting mode. Stay tuned!
