guac that rocks!

I hope you had a fabulous weekend friends. playoff hockey kicked off here in Syracuse this weekend! the guys played great and head to St.John’s, Newfoundland today with the series tied at 1-1. since the hubs is going to be gone for several days I am going to head back to Canada myself to “tie up some loose ends”.

following our 30 week doctors appointment (I will be including a little pregnancy update to on the blog this week :) ) we both realized how fast our due date is arriving and that there are a few things we still need to figure out as well as purchase. to be honest, I am mostly concerned about having a car seat and some diapers ….

while the plan is to have the baby in Canada at the end of the season, this ultimately depends on how long the playoffs last and perhaps more importantly, when the baby decides to join us. I plan on visiting my midwife, naturopath + pre-registering at the hospital as well as purchasing a few items so that we are (mostly) ready…. just in case.

but before I head home I want to share some avocado love – this time in the form of guacamole! before friday’s first playoff game we did some tailgating. it was a gorgeous warm and sunny evening to be outside and enjoy good eats, drinks + company.

this was my contribution to our little soiree – delicious {+ healthy} guacamole.

 


Ingredients:

note:these amounts are based on the batch that I made but obviously feel free to adjust.

  • 5 avocados
  • juice of 2 limes
  • 1 tomato
  • 1/8 cup cup red onion
  • handful of fresh cilantro
  • dash of red chili flakes
  • 1-2 cloves of garlic
  • sea salt + pepper (to taste)

Method:

  1. cut, peel + pit your avocados. place the flesh from all of the avocados into a small bowl. using a fork mash the avocados until they reach your desired consistency. I prefer mine to be a little chunky.
  2. dice the tomatoes and mince the garlic + red onion.
  3. add the juice of your limes, tomatoes, red onion, garlic, red chili flakes, cilantro, sea salt + pepper to the avocados and combine well.
  4. serve with whatever you love to dip into your guacamole!

kale, spinach + avocado salad with lemon tahini dressing

it has felt like a whirlwind of a weekend, but my sister is now married and I am absolutely thrilled to have a new brother-in-law. we had a wonderful day of loving celebrations on saturday and I was truly honoured to stand-up with my sister on her big day.

I am still at home for the week and there are lots of things on my to-do-list. but before I run out the door again…I wanted to share with you this wonderful salad that made for a super delicious + satisfying dinner for the husband and I. we were both looking for something a bit smaller but still hearty enough to fill us up. I would (and will) make this salad again in a heart beat. you can eat this alone as a salad or add it to a wrap of your choice.

Ingredients:

  • kale
  • spring mix AND/OR spinach
  • 3 tbsp hemp seeds
  • 1 avocado
  • nut pate
  • 1/2 cup quinoa (previously cooked)
  • nori wraps (optional)
Method:
  1. wash + chop your greens. add to a large bowl.
  2. peel + chop avocado into small pieces.
  3. make lemon tahini dressing (see directions below).
  4. add the lemon tahini dressing to your mixed greens + combine well.
  5. top your salad with hemp seeds, nut pate, quinoa + avocado.
  6. you can enjoy the salad as it is or add it to a nori wrap like I did. I love almost anything rolled up in a nori wrap!

Lemon Tahini Dressing Ingredients:

  • 3 tbsp tahini
  • 3 tbsp apple cider vinegar
  • 3 tbsp water
  • 3 cloves of garlic
  • juice of a lemon
  • cayenne

Method:

  1. mince garlic.
  2. add all ingredients to a blender or food processor.
  3. blend until smooth.
  4. you will likely have some extra leftover, so place in a mason jar + store in the fridge.
