Welcome to Monday friends!

I hope you had a wonderful weekend. Mine included a bit of work, lots of play, and some time at the rink. The hubs has a couple days off so we are packing up and heading to Belgium! I am so excited. This will be our first little road trip since we touched down in Europe a few months ago.

Before we hit the road, I blended this beauty of a drink. Not only are blended greens amazingly awesome for you always, but it is a wonderful way to use up your fresh produce! This was a fabulous way to start the day and there was plenty left over to take with us on the car ride for a little snack later in the day.

water + apple + pear + banana + blueberries + cucumber + mixed greens {approx 3 or 4 cups of whatever I had left in my kitchen – some romaine and kale} + lemon + lime + parsley + vega protein powder

guten morgen + healthy food inspiration

translation: good morning.

I am clearly making leaps and bounds with my german …. ;)

I hope you all had a wonderful weekend. the last week has been a busy one although, it feels like all days are busy now with Miss S around! I am still trying to get a handle on finding a healthy balance of being a mom + wife, personal chef, one woman cleaning crew, school, and my nutrition work. ha. do any of you busy mama’s have some tips for rookie’s like me?

I thought I would start the week off by sharing a couple food pics of what we have been enjoying in my house this last little while. these meals are pumped up with veggies, fruits, protein, healthy fat, antioxidants, fibre and so much more goodness. I hope this will serve as a little inspiration this week to eat clean!

heaping greens + chickpeas + parsley + cucumber + tomato + carrot + feta cheese

immune boosting orange juice. carrots + apple + pear + lemon + lots of ginger.

post workout refuel. whole grain bread {toasted} + almond butter + raw honey + banana + hemp seeds + cinnamon

gorgeous greens + cucumber + parsley + goat cheese + quinoa chicken + curry spice

healthy pre-game meal for the hubs. this is a much healthier version of chicken parmesan {a pre-game staple for most hockey players} + whole grain pasta with lightly steamed red peppers + zucchini + red onion in a pesto sauce.

chicken parmesan method:

  • I did an egg white wash on the organic chicken breasts and coated it with a mix of healthy spices + millet + sesame seeds.
  • preheat the oven to about 375 and bake for about 20-30 minutes {this will depend on the thickness of your chicken breast}.
  • When the chicken has about 5 minutes left, I thinly sliced some fresh buffalo mozzarella and placed on top of the breast.
  • After removing from the oven you can top with a bit of tomato sauce or fresh diced tomatoes would be great too.
