hummus pizza

welcome to monday friends!

I love pizza a lot. here is a yummy one I made this weekend while the hubby was away. this wasn’t necessarily planned, it just happened using bits + pieces of what was in my fridge. it was delicious!

Ingredients:

  • 1 sprouted grain wrap (ezekiel 4:9)
  • 3-4 tbsp hummus
  • 2 handfuls of spinach
  • lentil mixture (I made in advance – lentils, cucumber, red onion, EVOO, juice of lemon, sea salt + pepper, parsley + garlic)
  • goat cheese

Method:

  1. preheat oven to 350 degrees.
  2. assemble your pizza by first spreading hummus on the entire wrap, just as you would a tomato sauce.
  3. put the spinach on a layer on top of the hummus.
  4. then crumble some goat cheese on top of the spinach.
  5. place in the oven for about 10-15 minutes or until everything is warmed + your wrap is a little crispy.
  6. top with the lentil mixture, serve + enjoy.

what’s not to love about pizza!?! the combination of a warmed pizza with the cooled lentil mixture that had been in the fridge marinating for a couple of hours was so refreshing + tasty. this is a vegetarian pizza that is loaded with protein that will leave you feeling satisfied + energized for hours

back in the kitchen

well the husband and I are back in Syracuse after a week at home with our family, following the passing of our very special nephew.  I first and foremost want to thank all of you who took the time to call, write, type + text your condolences. all of your thoughts + prayers for our family were very much appreciated during this difficult time.

it feels good to be back in a bit of a routine. and I must admit (consider this a confession), my eating habits were completely thrown for a loop when we were at home. food wasn’t a top priority, and boy did the hubby + I feel pretty gross by the time we got home. let’s just say there was more pizza, tim hortons bagels, nacho dip, lasagna, cupcakes, pie + ice cream, chocolate + (more) cupcakes than my body is used too! yikes! buuuut, we are back to a healthy routine and already feeling much better.

I did a rather large grocery shop yesterday and was so happy to find this great health food store. I picked up lots of fresh goodness and I am enjoying being back in the kitchen. but before I could start cooking I was appalled at the state of my pantry…..

soooo I dedicate about 10 minutes to re-arranging the pantry and voila, it looks much better + I can actually find things now!

once the pantry was complete this is what I made for lunch. a yummy tuna sandwich + salad.

for the tuna mixture I used: canned tuna, 1 rib of celery, handful of chopped kale, EVOO, apple cider vinegar, juice of 1/2 lemon, S.S + P to taste. I added a piece of romaine lettuce to my bread + added a salad (not pictured) which made for a tasty + satisfying lunch.


for those of you not on facebook. I posted this article yesterday that talks about just some of the reasons you shouldn’t consume diet-soda. as I said on the facebook page, I am only telling you this because I love you + want you to feel + look your absolute best!

and some other fabulous facebook news – ‘the healthy ginger’ now has 500 likes! woohoo! so thank you to all of your for your support over the last few months. I am loving sharing all this goodness with you + I promise there is lots more to come.
